
It has been a tradition both in European countries and the U.S. to commemorate the baptism or christening of a child with a celebration, and this of course includes a baptism cake. You can order a baptism cake from a local bakery, but many families choose to celebrate their baby's baptism with a homemade cake. Baptism Pound Cake
- 2 1/4 cups all-purpose flour
- 2 cups sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon grated lemons, rind of
- 1 teaspoon vanilla
- 1 cup butter, softened
- 1 (8 oz) container of yogurt (lemon, pineapple, orange, strawberry or vanilla)
- 3 large eggs, at room temperature
Mix all of the ingredients together in one bowl, place in a greased pan of your choice, and bake at 325 degrees for an hour and ten minutes.
Victorian Cake
- 10 oz butter
- 8 oz sugar
- 4 eggs
- 1 1/4 lbs flour
- 4 oz ground almonds
- 6 oz candied peel
- 1/2 grated nutmeg
- pinch ground cloves
- 1/8 pint brandy
Mix all of the ingredients together in a large bowl, and pour into a large greased cake pan. Bake at 325 degrees for 1 hour and 20 minutes. Once the cake has cooled, you can ice it with your choice of frosting, such as almond frosting. See some frosting recipes below.
Large Baptism Cake
- 16 Eggs
- 5lb Flour
- 5lb Currants
- 3lb Butter
- 2lb Sugar
- 1lb Sweet Almonds
- 8oz Candied Citron
- 8oz Candied Orange
- 8oz Lemon Peel
- 1/4 pint Wine
- 1/4 pint Brandy
- 1/4 oz Ground Mace
- 2 Nutmegs, grated
- Pinch Ground Cloves
Sift the flour as finely as possible, and whisk the egg whites and yolks separately. Pound the almonds adding a few drops of water, and cut the candied peel into neat slices. Cream the butter, and stir in the sugar. Whisk egg the whites to a solid froth, and combine them with the butter and sugar. Beat the yolks for 10 minutes, and add to the flour, nutmegs, mace and cloves mixture.
Beat the above mixture together for 30 minutes or longer. Then, lightly mix in the currants, almonds and candied peel with the wine and brandy. Line a cake pan with buttered paper, and add the batter. Bake at 325 degrees for five to six hours. To prevent burning, you may want to place a sheet of baking paper on top. Ice with almond frosting, and add sugar frosting on top.
Sponge Cake
- 4 egg yolks
- Flour (see instructions)
- 1 cup sugar
- 11/4 teaspoons baking powder
- 3 tablespoons cold water
- 1/4 teaspoon salt
- 11/2 tablespoons corn-starch
- 4 egg whites
- 1 teaspoon lemon extract
Beat egg yolks with water until thick and lemon-colored, add sugar gradually, and beat for two minutes. Put corn-starch in a cup and fill the remainder of the cup with flour. Mix and sift corn-starch and flour with baking powder and salt, then add to the sugar/egg mixture. Beat egg whites until stiff, and add to batter. Finally, add flavoring. Bake for 30 minutes at 325 degrees.
Frosting Recipes
Although many of these recipes don't need to be frosted, we've added a few favorite frosting recipes for you to choose from.
Almond Icing
- 2 egg whites
- 8 oz icing sugar
- 8 oz ground almonds
- 1 tsp almond essence
Combine all ingredients together, allow icing to dry and harden, then top with sugar icing for a yummy alternative.
Sugar Icing
- 1/4 to 1/2 cup butter or margarine
- 1 cup sifted powdered sugar (You may need to add more for thicker consistency.)
- 1 to 2 tablespoons milk
Cream butter and milk, and gradually add powdered sugar. Mix until creamy.
